My 16-year-old comes home from school looking for an after school snack.  I love this recipe because it’s quick, easy, and can be prepared ahead of time.  Not only that, but my mom used to make these for my sisters and I, too!

Butterscotch Cornflake No-Bake Cookies

1 bag butterscotch morsels
1/4 cup peanut butter
4 cups corn flakes (frosted or plain)

Melt butterscotch morsels and peanut butter together in microwave or on stove top (stir constantly on stove top or use a double boiler pan).  Add corn flakes and stir until coated well.

Cover cookie sheet with wax paper or parchment paper (foil would probably work in a pinch). Drop by spoonful onto covered cookie sheet. Put in refrigerator until hardened…about 10 minutes (if I’m in a hurry, I put them in the freezer for 5 minutes!)
