The neighbor just called. Suzie, the young mother down the street, just had her second baby. The neighbors are organizing meals this week. Could you provide a meal tomorrow evening?
A new family just moved in across the street. You’d love to go meet them, but you’d really like to bake them something first. You don’t really have the time to today, though. What do you do?
If you’re like me you’ve probably found yourself in one or more of the above situations. It wasn’t until I discovered “Once a Month Cooking” that I found an easy way to solve each challenge. Freezer meals have not only changed the way I prepare meals for my family, but they have also been part of our “living with less” strategy saving us hundreds of dollars each month.

Jill, thanks for sharing this. Since my mom (who lives long distance) provided me with many frozen meals when my second child was born, I have realized the benefits of freezer cooking. I would much rather be outside with my children at the end of the afternoon, relaxing and enjoying each other, than slaving in the kitchen and fending off squabbles. I would love to see a sample menu of yours, some more specific recipes, or book resources as I run out of ideas of what are good freezer meals. Thanks!
Freezer meals are definitely 'situation savers' but I'm sure health wise, it would be a good idea to keep at the minimum. In fact, it's better to plan your meals at least one week in advance & shop accordingly. This way one balances expenses, eats fresh food and stays healthy.
