One year, while on vacation at my parent’s condo in Ft. Walton Beach, Florida, I introduced this “salad meal” to my family. They were willing, but skeptical. Once we’ve learned the individual likes and dislikes of each family member for what they prefer on their salad, this has become a family favorite.

Spinach Salad

Bag of fresh spinach
Several boneless, skinless chicken breasts (boiled and diced—I boil them frozen)
Fresh Strawberries (sliced)
Diced Apples
Mandarin Oranges
Craisons
Raisons
Roasted Sunflower Seed Kernals
Your choice salad dressings

I usually prepare individual plates for this meal. Place generous amount of fresh spinach on each plate. If you so desire, tear spinach leaves into smaller pieces. Add apples, strawberries, and oranges as desired. Add chicken to top off each salad. Put Craisons, raisons, sunflower seed kernals, and dressings on table for the family to add as desired. This is a one plate meal with meat, vegetables, and fruit all in one delicious salad! Enjoy!
