Looking for something good to do with those bananas that are about to go bad? This Banana Cake recipe was my grandmother’s recipe and it is soooooo good. My kids love it and ask for it anytime the bananas on the counter are getting dark!
Savage Family Banana Cake Recipe
2-1/4 c. flour
2-1/2 t. baking powder
½ t. baking soda
½ t. salt
¼ c. sugar
½ c. Crisco
3 or 4 very ripe bananas
1 t. vanilla
2 eggs
½ c. buttermilk or sour milk (we do ½ c. milk and stir in 1 tsp of vinegar to make it sour)
Bake in greased and floured 9 x 13 pan until surface springs back gently when pressed with fingers (usually about 40 minutes—the cake may not be brown in color—it may still have a very light color to it)
Icing (this is the best part!)
1/3 c. soft butter or margarine
3-1/2 c. powdered sugar
3 or 4 Tbsp. milk
1-1/2 t vanilla
¼ t. almond extract
Blend together and frost on cooled cake.
Enjoy!
I will have to try that next time – I'm always making banana bread, muffins, & cookies with our "bad" banana's – cake will be a nice change.
Have you been to my home and seen the overabundance of bananas? I bought too many this week. Our family eats a bunch a day,so I thought I would get ahead of them.lol It didn't work so I am off to make some banana cake. Thanks Jill for the recipe:)
How fun, Rachel and Kelli! Tell me how you like it!
You had me at frosting. That sounds so good I'm tempted to go in my kitchen right now and make my bananas go bad!
I peel the bananas and put them in a ziplock and freeze them for smoothies. My kids and I love smoothies. They are like healthy milkshakes!
Mmmmmm Jenny, that sounds good!
Laurie, you can make bananas go bad by putting them in a brown paper bag. It makes them ripen faster!
I have wanted a banana cake recipe for sooo long. So glad to find this one!
